sweet potato and brown rice balls
These brown rice balls are delicious, nutritious, easy and scrumptious.
2 cups brown rice rinsed
2 med- large sweet potatoes peeled and cut into chunks for baking
2 tablespoons spice mix (adjust to taste )
1 tablespoon hemp seeds ( optional but great or your health)
3 teaspoons grated ginger
1 bunch fresh coriander chopped (best not to use the stems you can save them for something else)
Toasted sunflower seeds and or sesame seeds for rolling balls. I toast my sunflower seeds with a little spice mix for added flavour.
Instructions
While you are cooking the brown rice put the sweet potato in a baking pan, drizzle with olive oil and mix the spice mix through. Bake until soft and not crunchy.
When the rice is cooked drain it and allow it to cool a little and then in a bowl mix the sweet potato, rice. ginger, hemp seeds and coriander.
Roll into balls and cover with toasted sunflower and or sesame seeds.
Place on a baking dish and and bake in oven for about 20 mins on 180c
