Pink Homous

This beautiful beetroot homous is a simple twist on the classic version with the added nourishing benefit of raw beetroot.

ingredients:

1 can chickpeas rinsed

4 tablespoons extra virgin olive oil

1/3 cup unhulled tahini

2 cloves garlic

juice of half a lemon

1 teaspoon of paprika or cumin or a mix

1 grated medium size peeled beetroot

1 tablespoon maple syrup

salt to taste

Place all the ingredients except for the beetroot and maple syrup in food processor and blend until it is all mixed. Add the grated beetroot and blend again. Serve with some fresh herbs if you wish and a drizzle of olive oil.
