Baked Cauliflower, Chickpea and Lime Salad

This is one of my first salads that made me realise my food was special. It’s so easy, nutritious and delicious.

Ingredients

1 cauliflower head broken into pieces of desired size

1 tin chickpeas rinsed

200g feta

1 tablespoon curry powder

1/2 lime

2 handfuls rocket

1/2 cup fresh coriander

balsamic vinegar

olive oil

toasted sunflower seeds ( I toast mine with little curry powder)

Place cauliflower pieces in an oven tray, drizzle with olive oil and sprinkle and toss with the curry powder. Bake in oven ( around 180c) for about 20 mins (or longer depending on size of pieces) and then add in the rinsed chickpeas and half a cut lime, drizzle a little more oil on the chickpeas and bake for another 15mins.

Next lay the rocket on your dish, sprinkle with crumbled feta and toasted sunflower seeds and drizzle and toss with olive oil and balsamic vinegar. Now add the caulifower pieces and chickpeas, sprinkle with coriander and squeeze the baked lime over it. YUM.
