Baked Pear, bazil nut and Rocket Salad

Nourishing, delicious and filled with nutrients, the baked pears are surprisingly sweet.

Ingredients

3 pears ( almost ripe is perfect)

1/2 cup chopped pecan nuts

balsamic vinegar and olive oil

1 lime

3 cups rocket

3/4 cup shaved parmesan or crumbled goats cheese or feta.

To make this exquisite salad slice the pears into chunks - about 8 pieces per pear and place in a baking tray and drizzle and toss with balsamic vinegar. Bake at about 190c for ten minutes and then add the chopped brazil nuts and the lime cut in half and bake for a further 10 minutes.

Place the rocket on your dish, layer with your caramilsed pear and nuts, sprinkle with your cheese and drizzle with balsamic, olive oil and squeezed lime.
