Goddess Potato Salad

For salad

1 kg washed potatoes ( I like to use small ones but any will do )

1 broccoli head

olive oil

salt and pepper

For dressing

1/2 avocado

1/2 cup natural yoghurt

1/4 lime with the skin washed.

1/4 teaspoon chili flakes

1/3 cup water (filtered preferably) or more to adjust thickness

To make

Cut the potatoes in half or to desired size. Boil for about 7 mins or until soft. Drain and place on an oven tray and squash down with a fork. Drizzle with olive oil, season with salt and pepper and bake until golden - about 20mins on 185c.

Meanwhile crumble the broccoli in a food processor.

To make the dressing mix all ingredients in a blender. If you are using the whole lime you will need to be sure it is well blended otherwise it can be a little bitty. If you don’t want to use the lime skin simple use the juice of a whole lime and grate some of the zest.

When the potatoes are ready place them in you dish and mix with the broccoli crumble and drizzle with the dressing. Season with salt and pepper as required.
